Healthy Paleo Pancakes Recipe

A simple and delicious paleo recipe for a fast and healthy breakfast, or an indulgent Sunday night treat.
Serves:

Ingredients:
- 1 small mashed ripe banana
- 1 free range egg
- ½ cup coconut milk
- ½ cup almond flour (adjust to desired texture)
- Pinch of cinnamon
- Dessert spoon of coconut oil
To serve – ½ pot coconut yogurt, agave syrup, toasted walnuts and fresh, washed strawberries
Method:
1. Mix together the mashed banana, egg, coconut milk, almond flour and cinnamon in a medium sized bowl, use a whisk into a batter-like consistency, adding air into your pancakes as you go, to create a fluffy texture.
2. Heat the coconut oil in a non-stick pan, add the walnuts and leave for 2-3 minutes while you prepare the strawberries.
3. Remove the walnuts from the pan and place aside. If you need more oil, add it now.
4. Now that the pan is hot, use a table spoon to make 3 pancakes with your mixture, dolloped on to your pan. Turn the heat down slightly and allow to cook all the way through. They may take slightly longer than normal pancakes, be patient, they are worth it.
5. Adding more coconut oil if necessary, use a spatula and gently turn the pancakes on the pan.
6. To serve, stack your 3 pancakes on a plate, top with your toasted walnuts and freshly chopped strawberries, drizzle agave syrup over your pancake stack and plop a little dollop of cool coconut yogurt on top, and enjoy!
