Orange Cranberry Cookies Recipe

Makes:
14 cookies
Ingredients
- 1 cup almond flour
- ½ cup packed brown sugar
- ½ teaspoon salt
- ½ teaspoon baking soda
- 1 tablespoon orange zest*
- 2 tablespoons orange juice
- ¼ cup sweetened dried cranberries
*NOTE: One medium orange will yield 1 tablespoon of orange zest and 2 tablespoons of orange juice.
Method
1. In a large bowl, mix together the flour, brown sugar, salt, baking soda, orange zest, and orange juice until a dough forms. Mix in the cranberries.
2. Refrigerate the cookie dough for at least 30 minutes.
3. Preheat the oven to 350°F. Line a baking sheet with parchment paper.
4. Drop the dough by the tablespoon onto the parchment-lined baking sheet. With your fingers or a fork, lightly press down on each cookie to flatten it.
5. Bake the cookies for 13–16 minutes or until they’re golden brown.
6. Let the cookies cool on the baking sheet for 1–2 minutes before transferring them to a cooling rack.
