Chopped Salad with Pistachio Vinaigrette Salad Recipe
Ingredients:
- 1 bunch watercress
- 1 bunch pea shoots
- 1 small bunch fresh basil, sliced into thin ribbons
- 1 avocado, sliced
- 7 radishes, sliced into coins of various thickness
- ½ English cucumber, cut in half then sliced
- 1 ear corn, cut kernels from cob
- 1 handful green beans, trimmed and cut in half
- Radish sprouts
For the pistachio vinaigrette:
- 50g pistachios, finely ground
- 1 lemon, juice and rind, finely grated
- 100ml olive oil
- 1 tbsp agave
- Salt and pepper to taste
Method:
- Step 1: Put all the ingredients for the pistachio vinaigrette into a small bowl and whisk until incorporated.
- Step 2: Combine the salad ingredients into a bowl and toss with the pistachio vinaigrette.
- Step 3: Top with radish sprouts and enjoy.
