Banana and Blueberry Oats Recipe

Ingredients
- 1 banana, peeled and sliced
- 40g oats
- 125ml milk (any kind)
- 1 tsp vanilla essence
- 40g blueberries
- 10g pistachios, finely chopped
Method
1. Mash half the sliced banana with a fork. Set the other half aside.
2. Put the blueberries in a saucepan with a splash of water and cook at medium heat. Heat thoroughly for a couple of minutes until the blueberries become soft and begin to burst.
3. To the same saucepan, add the oats, milk and vanilla essence and stir thoroughly until combined.
4. Cook the oats over medium heat for 3–5 minutes until the porridge is creamy and has thickened. As the oats are cooking, continue to stir often, bursting the blueberries as they become soft. This gives a splash of colour, giving the porridge a lovely purple tone.
5. Spoon the porridge into a bowl and top with the remaining banana and a sprinkle of pistachios.
