Apple Oatmeal Bars Recipe
This breakfast on the go also makes for a great snack. Filled with oats, apples and pumpkin seeds, these bars will keep you feeling full. Pumpkin seeds add a good amount of magnesium, omega-3 fatty acids, and protein.

Ingredients
- ½ cup coconut oil, plus more for greasing
- ½ cup coconut sugar or maple syrup
- 1 tsp vanilla extract
- 2 eggs
- 2 red apples, peeled, cored, and diced or grated
- 3 tbsp milk of choice
- ⅔ cup rolled oats (to be turned into oat flour)
- ½ cup oats
- 2 cups All-Purpose Flour (see below)
- ¼ tsp salt
- 1 tsp baking powder
- ¼ cup pumpkin seeds
Method
1. Preheat the oven to 375°F.
2. Grease a 9 x 13-inch baking dish with some coconut oil.
3. In the bowl of a stand mixer, combine the rest of the coconut oil and coconut sugar or maple syrup and mix until they combine.
4. Add the vanilla extract, eggs, apples, and milk and mix until they combine.
5. In a food processor, pulse ½ cup of rolled oats into ½ cup of oat flour.
6. Add the oat flour, All-Purpose Flour, oats, salt, baking powder and pumpkin seeds to the apple mixture. Mix until they just combine.
7. Spread the batter into the prepared baking dish and bake for 30–35 minutes, until the topping turns golden brown.
8. Remove the bars from the oven and let cool for 30 minutes or more time, if needed. Cut into bars using a knife.
All-purpose flour blend

Ingredients
- 1 cup brown rice flour
- 1 cup white rice flour
- 3 cups tapioca starch
- 3 tsp xanthan gum
Method
Combine ingredients thoroughly and store in an airtight container or resealable plastic bags for up to one month.
