Amaranth, Orange And Dark Chocolate Bites Recipe

Ingredients
- 55g (2 oz/¾ cup) shredded coconut
- 25g (1 oz/¼ cup) flaked natural almonds
- 20g (¾ oz/¾ cup) puffed amaranth
- 200g (7 oz) dark chocolate (minimum 70 per cent cocoa solids), coarsely chopped
- Thinly peeled zest of 1 orange, white pith removed, finely chopped
Method
1. Lightly toast the coconut, almonds and puffed amaranth in a large frying pan over medium heat for 2-3 minutes. Set aside to cool.
2. Melt the chocolate by stirring in a heatproof bowl over a saucepan of gently simmering water. Don’t let the base of the bowl touch the water. Remove from the heat. Stir in the amaranth mixture and half the orange zest.
3. Line a large tray with baking paper. Spoon heaped teaspoons of the mixture onto the tray, then sprinkle the mounds with the remaining orange zest.
4. Set aside at room temperature for about 4 hours to set.
Tip
These choc bites will keep in an airtight container in a cool dark place for up to one month.
