Leek and potato Soup Recipe

Ingredients
- 1 tbsp vegetable oil
- 2 large leeks, cleaned and sliced
- 250g potatoes, peeled and chopped
- 2 vegetable stock cubes
- 2 pints water
- Salt and pepper to taste
Method
1. Heat the oil in a pan, and add the leeks and potatoes. Cook for 3–4 minutes.
2. Add the water and bring to a boil. Add the stock cubes. Cover with a lid and let simmer for 10–15 minutes, until the potatoes have softened.
3. Remove from the heat and blend. Season to taste.
