Avocado, Cucumber and Coconut Smoothie Recipe

Ingredients

  • 1 ½ organic cucumber
  • 100g (4oz) rocket
  • 3 sprigs of mint
  • Flesh of 1 avocado
  • 100ml coconut milk
  • Juice of 1 lime
  • 150ml grapefruit juice
  • 100ml mineral water
  • Ice cubes (optional)

Method

Wash the cucumber, rocket and mint. Chop the cucumber coarsely.

Blend the ingredients to a smooth purée using a regular blender or food processor or, failing that, you can use an immersion blender. If the smoothie is too thick for your liking, you can dilute it with a few ice cubes or with a little extra mineral water.
